Brinjal Sabji | Baingan Sabji |
Ingredients for making brinjal sabji / baingan sabji:
Brinjal- 250 g ( cleaned and chopped)
Oil 3 tbsp
3 big onions made to a smooth paste
2 tbsp ginger garlic paste
Curry leaves few
Salt as needed
Red chilly powder 1 tsp
A pinch of turmeric
Coriander powder 2 tsp
Water 100 ml
Chopped coriander leaves a handful

Cooking instructions for making brinjal sabji / baingan sabji:
Heat oil in a kadai and add onions paste.
Fry for a minute and add curry leaves.
Mix and add ginger garlic paste.
Add red chilly powder, turmeric and coriander powder.
Add salt and mix well. Add chopped brinjal and mix well to coat masala evenly.
Add 100 ml water and cook in simmer (cover the kadai with lid) and cook for 12 -15 minutes till brinjal is well cooked.
Once cooked, open and cook for water to evaporate.
Then add coriander leaves and mix.
Enjoy with roti.
