Brinjal| eggplant masala fry:
Ingredients:
Brinjal 250g
Coconut oil 3 tbsp
Mustard 1 tsp
Onion 2
Curry leaves few
Salt as required
Red chilly powder 1 tsp
Roasted cumin powder 1 tbsp
Coriander leaves a handful
Preperation for making brinjal masala fry:
Chop onion to fine pieces.
Slit brinjal lengthwise as shown in the pic.
Use a pressure pan for the recipe.
Method of cooking brinjal masala fry:
Heat coconut oil in a pressure pan.
Fry mustard.
Once mustard crackles, add onion chopped, curry leaves and salt.
Saute well.
Add brinjal, red chilly powder, roasted cumin powder and turmeric mix well
Pressure cook for 3 whistle. Do not add any water.
Once pressure is released naturally. Open the pressure pan and heat again.
Toss continuously in high flame, add coriander leaves and mix.
Let the brinjal become dry and crisp.
Switch off stove and enjoy with rice and hot rasam.
