No oil healthy Beetroot Poriyal
Ingredients for Beetroot Poriyal:
Beetroot 2 nos chopped
Water 1/2 cup
Salt as per taste
turmeric 1/4 tsp
To grind coarsely:
Coconut 3 tbsp
Green chilly 1
Curry leaves 10
Cumin 1 tsp
Method of cooking for Beetroot Poriyal:
Pressure cook beetroot with water, salt and turmeric for 3 whistles.
Open the pressure cooker and let the remaining water evaporate in sim flame with ocassional stirring.
Grind together coconut, cumin curry leaves, green chilly by just inching them 2 to 3 times in a mixer.
Once the water from beets have evaporated, add the crushed coconut mix and toss well.
Serve hot Beetroot Poriyal with rice and fenugreek curry.
