Ginger garlic chicken
When it comes to Chicken, many of us like to try new versions. I love that way too. I already have a huge list of chicken recipes in this website. But I have a personal choice if it is s made in Kerala style with coconut oil. This Ginger Garlic Chicken - Kerala Style is super spicy crispy chicken cooked with thick masala and coated with coconut oil.
I regularly watch a super special cookery show on Asianet Channel. It shows food cooked in toddy shops. The recipes are all unique and real yum. I am sure any viewer of that programme would be drooling by the end of the show. In many of the yummy dishes made, most of them use strips of ginger garlic fried in coconut oil for be it a fish curry or a stir fry or for any meat recipe. That inspired me to make the Ginger garlic chicken.
The tricky and tastier part of the recipe is the roasting of onion, ginger and garlic strips well in oil. That does contribute to the yummy treat of the Ginger garlic chicken. If you would ask me for the best combo for this Ginger garlic chicken it is a chicken coconut pulao. My dad and my husband loved this Ginger garlic chicken to the core. The Ginger garlic chicken would be a little spicy for kids. Be sure to use coconut oil for the heavenly blend of spices coated chicken with crunchy ginger garlic strips.
500 g of cleaned de skinned chicken
3 tablespoon of chilly powder
6 tablespoon of coriander powder (un roasted)
1 tablespoon of ginger garlic paste
1 teaspoon of turmeric
6 tablespoon of coconut oil
5 tablespoon of sliced ginger strips
5 tablespoon of sliced garlic
6 sliced green chilly
1 onion thinly sliced
Method of cooking for ginger garlic chicken:
Marinate chicken with chilly powder, coriander powder, ginger garlic paste and turmeric powder.
Do not add water as chicken will have enough moisture to coat masala.
Set aside for 1 hour.
Heat a kadai with coconut oil.
Fry ginger, garlic, green chilly strips along with onion slices.
Let these ingredients get well fried.
Add marinated chicken and let it cook for 20 minutes with occasional stirring
Once the gravy thickens, add salt and the chicken become dry.
Serve hot ginger garlic chicken with your favorite rice.
