Tapioca Stir Fry
The Tapioca Stir fry is my Husband's Favorite dish. When he spot it, he immediately buys it and makes it all by himself. But then I spotted fresh Tapioca yesterday and bought 2 kg right away. I made this stir fry with 1 kg and it was soon gulped down by all in family. It goes well with fish curry and the Kerala version of fish curry.
Ingredients:
Tapioca-1 kg
Onion-3
Red Chilly- 5
Red Chilly Powder- 1 tsp
Salt- as per taste
Water for cooking tapioca
Turmeric Powder- 1/2 tsp
Coconut- 1 cup (shredded)
Oil- 2 tbsp
Mustard- 1 tbsp
Method:
Cut fresh tapioca and peel the skin as shown in the image.
Then further cut the peeled tapioca to bite size pieces and wash themm well.
In a pressure cooker, cook tapioca with some water and salt along with turmeric for 1 whistle.
Meanwhile finely chop onions and dry grind shredded coconut to coarse powder.
Heat oil in a kadai and add mustard and red chillies.
When mustard crackles add onions, little salt (note already tapioca's salted) and fry them well.
Add coconut and fry well till coconut is roasted too.
Then add tapioca and stir gently.
Transfer to serving bowl and enjoy as such or fish curry.
wow! Tempting..!Im a die hard fan of tapioca..i too prepared the same yesterday for dinner! But I used small onion,garlic n curry leaves..
